This book is so charming and entertaining that it almost makes me want to raise chickens. Almost, but not quite, so I am just as happy to have the book's wonderful collection of recipes from a cookbook author who is clearly as passionate about eggs as one can get.The recipes span the egg gamut from beverages (egg nog, smoothies) to those fabulous egg-based sauces (the Hollandaise Sauce is easy and so good that I would have eaten it like soup if I didn't think there would be hell to pay in the avoirdupois department) and on through salads, mains and desserts. Trainer Thompson does a solid on the old standbys - Croque Madame, Deviled Eggs, Quiche, Fried Egg Sandwich, Egg Custard, and Carbonara to name just a few - but has also included plenty of new recipes to try.The recipes I've made from the book make me want to cook my way through it. The Roasted Asparagus with Poached Eggs and Miso Butter is a delicious take on the simple Italian supper of a Parmesan-dusted fried egg atop cooked asparagus. The roasting deepened the flavor of the asparagus, the miso added the complexity of umami and the poached egg kept it all in balance.Yum! The Orange Walnut Cake is unusual and lovely, and I've already mentioned my encounter with the Hollandaise.Among the great tips about cooking eggs to perfection (a greater feat than the mere simplicity of an egg would indicate) and the anecdotes about raising chickens are sprinklings of quotes and sidebars of interesting information.Bottom line: This is an entertaining cookbook that has all of the egg recipes you'll likely ever need in one place, and it's a great book to have on hand for those "pantry dinner" nights as well - as long as there is a carton of eggs somewhere in the fridge.
A fairly good cookbook for the basics, but not a keeper for me. I already know how to scramble, poach, soft-boil, and hard-boil an egg. I know how to make omelets and egg salad sandwiches. I was hoping for more variety. More ideas beyond the basics.Plus, I bought this in Kindle and would have preferred a linked index or something to permit me to find recipes faster. As it is, I have to scroll through each chapter to locate the actual recipes, and that means working past a lot of information and photos that don't interest me because they pertain to raising chickens or the author's family anecdotes. It's just irrelevant. (Unless you are interested in raising your own chickens.) Some of the recipes call for raw eggs, which the author explains that you can safely eat if you're raising your own chickens, but that puts those recipes off-limits to those of us still buying grocery-store eggs.So, if you are looking for lots of creative, beyond-the-basics recipes for grocery-store eggs, and you don't want any extraneous content to get in your way, this book might not match up with your needs. On the other hand, it's well-written. If you buy this book in paperback so you can flip through it fast to the recipes, or if you are considering raising chickens for the first time, and you don't have any experience with that or with cooking eggs, you'll probably love this book. It gives lots of chicken raising facts, and gives you a feel for the homesteading culture. The recipes, though basic, are sound and will give you a good running start.
I'm searching for non-food ideas for eggs, since I'm getting more than we can use, and this book didn't provide that. However, I actually read it through like a novel -- it's very informative, entertaining, and clearly well-researched. Recipes were obviously tested out before being included. Wondered why there weren't pictures of some of the more unique dishes, so one could tell what they were aiming to produce before attempting to produce it, but otherwise, it's a great book for those who want to enjoy chickens and their products!

I love the personal touch of the stories and experience that the author shares right along side the recipes. The recipes are easy to follow and of great, well rounded variety. I have recommended this to so many friends and family already.
Okay book. I would of preferred less complex recipes. I live in the country in a small town and not all ingredients are available.
